  • 1 tsp vanilla extract
  • 1 cup fresh blueberries (or frozen, unthawed)
  • ½ cup mascarpone cheese or clotted cream (optional)
  • 2 tbsp powdered sugar (optional)
  • 1 tsp lemon zest (optional)
  • Coarse sugar for sprinkling
  • Powdered sugar for dusting
  1. Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk flour, sugar, baking powder, and salt.
  3. Cut in cold butter with a pastry cutter until mixture resembles coarse crumbs.
  4. In another bowl, whisk cream, egg, and vanilla.
  5. Pour into dry ingredients, gently stirring until just combined.
  6. Fold in blueberries carefully to avoid crushing.
