For the Chicken:

  • 1.25 lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1½ tbsp Cajun seasoning
  • ½ tsp smoked paprika
  • Salt & black pepper, to taste


For the Pasta & Sauce:

  • 12 oz twisted pasta (rotini or fusilli)
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1½ cups heavy cream
  • 6 oz Velveeta cheese, cubed
  • ½ cup shredded mozzarella (optional for extra gooeyness)
  • ½ cup grated Parmesan
  • ½ tsp crushed red pepper flakes (optional)
  • ½ cup reserved pasta water (if needed)


Optional Garnish:

  • Chopped parsley
  • Extra Cajun seasoning or Parmesan
