- 150ml (5 fl oz) milk
- 2 eggs
- 2 bananas, mashed
- 1 tsp vanilla extract
- 20g (0.7 oz) sugar-free cocoa powder
- 5g (0.18 oz) baking powder
- 1 pinch of salt
- Vegetable oil (for greasing)
- 30g (1 oz) walnuts, chopped
- 40g (1.4 oz) sugar-free dark chocolate
- 20ml (0.8 fl oz) hot milk
Directions:
1️⃣ Prepare the oatmeal mixture:
Combine the oatmeal and milk in a bowl. Let it soak for 10 minutes.
2️⃣ Mix the wet ingredients:
Add eggs, mashed bananas, and vanilla extract to the soaked oats. Stir until fully combined.
3️⃣ Add the dry ingredients:
Mix in cocoa powder, baking powder, and a pinch of salt. Ensure the batter is smooth.
4️⃣ Prepare the baking pan:
Preheat the oven to 180°C (360°F). Grease a baking pan with vegetable oil. Pour the batter in and level it.
5️⃣ Bake:
Bake for 30-35 minutes. Check doneness with a toothpick—it should come out clean.
6️⃣ Prepare the topping:
Chop the walnuts and set aside. Melt the dark chocolate with hot milk, stirring until smooth.
7️⃣ Decorate the cake:
Once cooled, drizzle the melted chocolate over the cake. Sprinkle chopped walnuts on top and finish with another drizzle of chocolate for a perfect touch.
