Braised Beef Stew, Vegetable Fried Rice, and Creamy Potato Salad
Serves: 6 | Prep Time: 45 mins | Cook Time: 3 hrs
Ingredients:
For the Stew:
2 lbs beef chuck, cubed
2 carrots, chopped
2 celery stalks
1 onion
2 cups beef broth
1 cup red wine
For the Fried Rice:
2 cups cooked rice
2 eggs
1 cup mixed vegetables
2 tbsp soy sauce
For Potato Salad:
4 potatoes
1/2 cup mayo
2 celery stalks
1/4 cup pickles
Instructions:
1️⃣ Brown beef, add vegetables
2️⃣ Add liquids, simmer 2.5 hrs
3️⃣ Meanwhile, make potato salad
4️⃣ Boil potatoes, mix with mayo & veggies
5️⃣ Stir-fry rice with eggs & vegetables
6️⃣ Serve all components hot
