Start Your Morning Right with a Healthy Breakfast Plate!
Ingredients:
- 2 eggs
- 1 tsp butter or olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup mushrooms, sliced
- 1 tsp olive oil
- 1/2 tsp garlic powder
- 1 cup fresh spinach
- 1/2 tsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 small tomatoes, halved
- 1/2 tsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 slice whole-grain bread
- 1/2 avocado, sliced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp lemon juice (optional)
- 1 tsp fresh parsley, chopped
Directions:
1. Prepare the Eggs: Heat butter or olive oil in a pan over medium heat. Crack the eggs into the pan and cook until the whites are set but the yolks are still runny (about 3-4 minutes). Season with salt and black pepper.
2. Sauté the Mushrooms: Heat olive oil in a pan over medium heat. Add sliced mushrooms, garlic powder, salt, and black pepper. Cook for 4-5 minutes until golden brown.
3. Sauté the Spinach: In the same pan, add spinach with olive oil, salt, and black pepper. Cook for 2 minutes until wilted.
4. Grill the Tomatoes: Heat a small pan with olive oil over medium heat. Place halved tomatoes face down and cook for 2-3 minutes until softened. Season with salt and black pepper.
5. Toast the Bread & Prepare Avocado: Toast the bread until golden brown. Slice avocado and season with salt, black pepper, and lemon juice.
6. Assemble & Serve: Plate the eggs, sautéed mushrooms on toast, grilled tomatoes, spinach, and avocado. Garnish with fresh parsley and enjoy!
