Salmon & Plantain Power Plate
Ingredients:
- 1 salmon fillet
- 1 ripe plantain (sliced)
- 1 cup fresh spinach
- 1/2 avocado (sliced)
- 1 tbsp olive oil
- Salt, pepper, and chili flakes
Instructions:
1. Season salmon with salt and pepper; pan-sear 4–5 mins per side.
2. Fry plantain slices in oil until golden and crispy.
3. Sauté spinach until wilted (1–2 mins).
4. Plate salmon with spinach, plantains, and avocado slices.
5. Sprinkle chili flakes on avocado. Serve warm.
