Braai Plate with Pap and Chakalaka

This dish is a popular African meal, likely from Southern Africa, featuring grilled meat, pap (a maize meal porridge), and a variety of sides. Here's a recipe to make it:

Braai Plate with Pap and Chakalaka

Ingredients
:

For the Grilled Meat:

  • 2 beef T-bone steaks

  • 1 beef sausage (Boerewors or any preferred type)

  • 2 tbsp vegetable oil

  • 1 tbsp barbecue seasoning

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 1 tbsp Worcestershire sauce

  • 1 tbsp soy sauce

For the Pap (Maize Meal Porridge):

  • 2 cups maize meal (cornmeal)

  • 4 cups water

  • ½ tsp salt

For the Sides:

  • 1 cup coleslaw (cabbage, carrots, and mayonnaise)

  • 1 cup chakalaka (a South African spicy vegetable relish made with tomatoes, baked beans, carrots, onions, and green peppers)

  • ½ cup mixed salad (cherry tomatoes, cucumbers, red onion, green olives, and cheddar cheese cubes)

Instructions:

1. Prepare the Meat:

1. In a bowl, mix vegetable oil, barbecue seasoning, salt, black pepper, garlic powder, Worcestershire sauce, and soy sauce.

2. Rub the marinade onto the beef steaks and sausage. Let them marinate for at least 30 minutes.

3. Grill the meat on a hot grill for about 5-7 minutes per side until well-browned and cooked to your desired doneness.

2. Cook the Pap:

1. In a pot, bring 3 cups of water to a boil and add salt.

2. Slowly pour in the maize meal while stirring continuously to prevent lumps.

3. Reduce heat and continue stirring until it thickens. Add the remaining water as needed to adjust consistency. Cover and let it cook on low heat for about 10 minutes.

3. Assemble the Plate:

1. Place the grilled meat and sausage on one side of the plate.

2. Serve a portion of pap next to it.

3. Add a serving of chakalaka, coleslaw, and salad.

4. Enjoy with your favorite sauce or chutney!
