Ingredients:
- 3 medium potatoes, peeled & sliced into thick rounds
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- Vegetable oil (for frying)
- 1 lb beef sirloin or flank steak, sliced into thin strips
- 1 tbsp soy sauce
- 1 tsp cornstarch
- 1/2 tsp black pepper
- 1 tbsp vegetable oil
- 1/2 red bell pepper, sliced
- 1/2 green bell pepper, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 green chili, sliced (optional for spice)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp hoisin sauce (optional for sweetness)
- 1/2 tsp sugar
- 1/4 cup beef broth or water
- 1 tsp cornstarch (mixed with 1 tbsp water for thickening)
Directions:
Prepare the Potatoes: Boil the potato slices in salted water for 5 minutes, then drain and pat dry. Heat vegetable oil in a pan over medium-high heat. Fry potatoes until golden and crispy, about 4-5 minutes per side. Drain on paper towels and season with salt, black pepper, and garlic powder.
Marinate & Sear the Beef: In a bowl, mix beef with soy sauce, cornstarch, and black pepper. Heat vegetable oil in a pan over high heat. Sear beef for 2-3 minutes until browned, then remove and set aside.
Sauté the Vegetables: In the same pan, add garlic, onion, and green chili. Stir-fry for 1-2 minutes until fragrant, then add red and green bell peppers, cooking for another 2 minutes.
Make the Sauce & Combine: Mix soy sauce, oyster sauce, hoisin sauce, sugar, and beef broth in a bowl. Pour the sauce into the pan, then stir in the cornstarch slurry. Return the beef to the pan and toss everything together for 1-2 minutes until coated and glossy.
