This dish consists of grilled or stewed beef sausages (or intestines) in a rich, spicy sauce, served with soft maize meal (pap or ugali) and sautéed cabbage with carrots. Here’s a recipe to prepare it:
Ingredients
For the Meat & Sauce:
500g beef sausages or intestines (cleaned and boiled if using intestines)
2 tablespoons vegetable oil
1 onion (chopped)
2 garlic cloves (minced)
1 teaspoon ginger (grated)
2 tomatoes (blended or finely chopped)
2 tablespoons tomato paste
1 teaspoon paprika
1 teaspoon curry powder
1 teaspoon chili flakes (optional)
1 cup beef broth or water
Salt and pepper to taste
For the Cabbage Stir-fry:
2 cups shredded cabbage
1 carrot (grated)
1 onion (sliced)
1 tablespoon vegetable oil
Salt and black pepper to taste
For the Pap (Ugali):
2 cups maize meal (cornmeal)
4 cups water
Instructions
1. Prepare the Meat & Sauce:
Heat oil in a pan, add onions, garlic, and ginger. Sauté until fragrant.
Add tomato paste and tomatoes, cook until the mixture thickens.
Stir in paprika, curry powder, chili flakes, salt, and pepper.
Add boiled sausages/intestines and beef broth, simmer until sauce thickens.
2. Prepare the Cabbage Stir-fry:
Heat oil in a pan, add onions and carrots, sauté for 2 minutes.
Add cabbage, stir-fry until soft but still crunchy.
Season with salt and pepper.
3. Prepare the Pap (Ugali):
Boil water, gradually add maize meal while stirring to avoid lumps.
Cook while stirring until thick and firm.
4. Serve & Enjoy:
Plate the pap, top with the rich, spicy meat sauce, and serve alongside cabbage stir-fry.
